Mix for the preparation of all types of chocolate sponge cake & Swiss rolls

How to use

Recipe:

Biscamix           1000g

Egg                      600g

Water                  200g

Method:

Mix all ingredients during 6 minutes on top speed and 2 minutes middle speed with a whisk attachment.

Specific weight: 360-400 gram/liter.

Baking temperature:

  • Deck oven 170 -180°C
  • Rotation oven 150 - 160°C

Baking time:

  • Baking tray 60 x 40 cm with 1800 gram batter 30 -35 minutes.
  • Baking tray 60 x 80 cm with 3600 gram batter 32 - 38 minutes.
