Mix for the preparation of all types of sponge cake & Swiss rolls
How to use
Recipe:
Biscamix 1000g
Egg 750g
Water 100g
Method:
Mix all ingredients during 6 minutes on top speed and 2 minutes middle speed with a whisk attachment.
Specific weight: 280-300 gram/liter.
Baking temperature:
- Deck oven 170 -180°C
- Rotation oven 150 - 160°C
Baking time:
- Baking tray 60 x 40 cm with 1800 gram batter 30 -35 minutes.
- Baking tray 60 x 80 cm with 3600 gram batter 32 - 38 minutes.
- Baking Tins ca. 25 minutes
